I would like to know which programming language are you using to code plague evolved?
Their engine was written in C++
they made their own engine? if so, it's pretty well done, I like the performance.

Nope, they are using unity.

Plague Inc: Evolved is written in C# using Unity.
Mobile version of Plague Inc is written in C++ on our own engine.
